We just love summer vegetables.  At our summer lake house we love to grill and entertain.  My husband and I just love salmon and my Cauliflower Rice Succotash was the perfect accompany for our dinner.  Everything was cooked on the grill and we ate outside.

Perfect summer dinner with friends.

Cindy's Note:  I made this dish on the grill.  You can also prepare in your own kitchen stove top. Feel free to boil the corn.

I made this recipe in the Instant pot and it came out really good and it did take less time.  I am still new with this pot but enjoying it so far.  I am also including a stove top option below.

Flax" vegan" Eggs

As I am preparing for Daniel Fast it was necessary to come up with another way to use "eggs" in my recipes.  Especially for binding.  I was told by a Vegan baker that she uses Flax seeds.  I tested it out and yes......  Works perfect.

Here are a few tips from my stumbles.  I will be adding this recipe link to keep it handy on multiple recipes for the Daniel fast and any Vegetarian recipes.

Tips:  Get a coffee grinder (about $9.99 or go to a thrift shop for $2)  You will use this every time you make your Flax eggs.  

Buy raw whole flax seeds and grind them fresh each time. Keep flax seeds in the refrigerator or freezer for storage.  

You may find there is a "nutty" taste but I think it's very subtle and have begun to enjoy the taste.

This recipe is per 1 egg.  If you need to use 2 eggs just double, 3 eggs just triple, you get it now......
