My disclaimer for this recipe! I am Italian and during the holidays especially I make everything BIG!  What if unexpected guests stop by!  What if family brings a friend!  What if I ran into someone at the grocery store and they are home alone for a holiday (that has really happened).  

These are some of the reasons there is always an extra dish waiting in the refrigerator on stand-by or when I make a dish - It's really BIG and LOADED with lots of good stuff.

Note!

  • You can make this really big lasagna and left overs are amazing!
  • You can cut ingredients in half to make an 8x10 size pan.
  • You can omit the ricotta, mozzarella, parmesan to make it dairy free
  • You can make the meat sauce, cut the recipe in half and freeze the remaining sauce for another time.

Spaghetti Squash Marinara Meatball Nests

During Blizzard Colbie I was home making a bunch of new recipes and after reviewing what I had in the freezer it was exciting to find a container of mini-meatballs and sauce that I made a few weeks ago. I always make extra meatballs and freeze some for later.  This came it very handy.

We were inviting some neighbors over and we all love spaghetti squash and since we were doing a buffet style dinner I decided to do individual servings of spaghetti squash with a mini-meatball nestled inside and it was a hit!  Our friends son Austin took the rest home!  I just love cooking for friends and family.  Make me so happy..  Not to mention we love having company and there were a few bottles of wine opened and the fire was going.  Then we all enjoyed watching our dogs playing in the snow!  

I am thankful and grateful everyday for all of the wonderful people in our lives.

Spaghetti Squash Pastitsio

Pastitsio is a Greek dish made with beef and lamb then layered with a pasta then topped with a creamy white sauce and baked to perfection.  I decided to use spaghetti squash and zucchini noodles for my pasta and cream coconut for the topping.  

Go ahead and enjoy my Paleo Pastitsio recipe!  It's been tested by Cindy's Table and enjoy by family and friends.  This is a perfect Everyday to Gourmet dish.

Puttanesca is a Southern Italian cuisine tomato sauce typically containing olives, garlic, capers, hot pepper, and anchovies mostly served with pasta but goes great with grilled chicken!

**Cindy's Tip!--You can bake the spaghetti squash ahead and before serving, toss the spaghetti strands in a sauté pan with olive oil to heat through!**

I recently cooked for over 100 people at Sons and Daughters to benefit Place of Hope.  One on the dishes included my Tuscan Burgers from my Cookbook Paleo Italian Cooking.

I had ordered plenty of Spaghetti Squash from Mr. Greens and made these amazing sliders!

You can also make them full size to fit your burger.  Cooking them in coconut oil gave them extra flavor.

Chefs Note!  If the squash batter seems to have a lot of liquid just add in more tapioca flour. Just a tablespoon at a time!

We heard it and it's true!  When you move to Florida your friends and family will come to visit. With all of the amazing farmers markets in our area I love preparing fun and healthy dishes.  

I love quiche and making this is a medium sized spaghetti squash are perfect for 2 couples to share.  There is nothing better as we sit outside enjoy the morning breeze watching the palm trees lightly swaying and sipping coffee.   Life is good!

A Ragu is a thicker sauce mostly made with meat but you can use chicken or mushrooms. The longer you cook the more flavors will increase. You can serve over your favorite roasted vegetables or even over a breakfast frittata.

Last night I made Chicken Scarpiello and packed up the extra chicken and chicken sausage and made this dish.  I will share a recipe for you to cook up chicken if you don't have left overs handy.  Actually, go and pick up a rotisserie chicken. That would be super easy!
