Since we are only in Massachusetts for a few weeks; I am trying to use up everything I have before we go back home to Florida.  I made my Crepes recipe that has been carried down from my Grandfather but if you want to use Paleo Crepes - Go here for my Paleo Recipe.

The banana cream does taste like the batter for your bread!  So yummy...

OK..  I need to admit something before I continue. I am addicted to Wild Friends Vanilla Espresso Almond Butter and can't stop consuming it!  It all started with my lava cakes and my daily smoothies.  

You can make this recipe as cupcakes, a loaf or what I did - use a cake pan and enjoy with your friends and a cup of tea.

Getting ready for my HEWfit Challenge and wanted to test out a new recipes.  I am thrilled because my husband even loved them.  At first I was planning on making pancakes but due to the consistency of my batter they were perfect crepes.

I used protein from my friends at Inner Amour.

The next time make them I am adding blueberries in the batter.

I batch made 4 crepes.

I wanted to change my breakfast around a little and decided to make these donuts. They are the texture of a soft tea bread.  Really yummy!  At the last minute before I put them in the oven I sprinkled on some unsweetened coconut. That was a great idea..  Yummy....

Basic Marinara

Basic Marinara

I normally double or triple this recipe and freeze them in individual containers. I try to make it basic then depending on the recipe I can add more flavors such as wines or chicken broth. When making a marinara/sauce remember that dried herbs hold their flavor and color when slow cooking. If you are using fresh herbs don’t add them in until you are finished with the cooking process and just before serving. If you have fresh tomatoes then use them starting with 3 pounds.

As an Italian we grew up with zucchini in almost any dish.  From scrambled eggs and zucchini, zucchini bread, sautéed or even roasted.  Now I just love zucchini noodles.  They are great with just garlic, EVOO, salt and pepper or with your favorite sauce!  Any way you enjoy zucchini noodles it will be amazing!

This recipe is super easy.  We have a chicken throne and it fills a 12 ounce beer. If you don't have one just use the beer can.  We also love all of the amazing seasonings from Moms Gourmet.

Tip:  We used an aluminum disposable pan to place the chicken throne on and chicken.  Great for a quick clean up!  Also, get a kitchen spray bottle with water, chicken broth or apple juice to baste.

I like using fresh roasted beets for this soup! You can puree the entire soup but I decided to leave some of the beets as chunks but for entertaining I would puree the entire pot and put into small bowls with a dollop of creme fraiche! Delicious and Refreshing. This soup can be served warm or at room temperature.

At the lake during the summer it's easy to make a dish, get in the boat and head over to a friends house.  I get to have my granddaughter Brooke with me all summer so my dishes need to be kid approves.  

I decided to make sloppy joes then it was easy to wrap and just warm at our friends house.  These were a big hit and fed 5 adults and 6 kids.  There was about 2 tablespoons left in the pan!  

I love veal mixed with my meat as it really lightens up the texture and taste amazing.  You can also use pork or just all meat.  Of course, the kids just knew it was sloppy joes - They all loved it...  

My stomach does not do well with green bell peppers but you can certainly use them in this recipe.  I went for the red and yellow.  This is also a great dish to use your Cast Iron Pan!

These pork chops were simply amazing.  Using my Cast Iron pan was perfect for our dinner.  Get it really hot to sear the chops then the oven will do the rest.  I did let the pork chops marinade for a few hours in the refrigerator seasoned with salt, pepper, fresh rosemary and thyme from my garden then olive oil.  

I made these for 3 of us!  I used the Center Cut Pork Chop Loin but you can use any cut for this recipe.

I was watching a video on better butter chicken and thought it would be a great way to try this on my granddaughter.  She is picky with seafood but loves chicken.  This paleo seafood dish was a hit and tilapia is so mild I think she thought it was chicken!  A healthy fake-out!

My husband and I love serving pulled pork over the summer.  It's easy to prepare in advance and keep warm while we are enjoying time on the lake with friends and family.  

We love our Big Green Egg and we know this was the best pulled pork because there was not one single piece left over.  

I have a few ways that I make my pulled pork such as my 5 ingredient pulled pork or Italian pulled pork that I prepare in the slow cooker.  

Since my spice rack is filled with Simply Organics we decided to do a dry rub and let it sit overnight.  

Give this recipe a try and even my vinegar based barbecue sauce that goes perfect with my vinegar cole slaw.

In Florida we can get some amazing fresh fish.  While at the market I spotted Yellow Tail Snapper wild caught and local.  I had all of the other ingredients to make this amazing dinner for 2.  This is a great dinner if you are following the Paleo diet or a healthy Mediterranean diet

Note:  You don't have to buy blackened seasonings as I am sure all of the spices are at home in your cabinet.  

Julienne is a knife cut where you slice long strips and keep them all in the same length.

This blue cheese and honey soufflé was amazing! My husband loves blue cheese and we were having company for dinner and I want to add something else to our steak dinner. I decided an hour before our guests were arriving to make this soufflé and it was a huge hit. Everyone put it on their salad plate with their salad (I added blue cheese to the salad too).
