I am just loving my spiralizer attachment from KitchenAid and it's been super busy in my kitchen!  If you don't the kitchenAid attachment there are other ways to spiralize including using a vegetable peeler.

This recipe was inspired by left overs!  I love roasting 2 chickens at once and serving for dinner one night then cutting the rest up and using for several different meals.  I freeze what I won't use in the next 2 days.  I also keep a little packed away for Jake! Love my doggie...

As an Italian we grew up with zucchini in almost any dish.  From scrambled eggs and zucchini, zucchini bread, sautéed or even roasted.  Now I just love zucchini noodles.  They are great with just garlic, EVOO, salt and pepper or with your favorite sauce!  Any way you enjoy zucchini noodles it will be amazing!

The butternut squash adds amazing fall flavors to this lasagna.  If you have a mandolin, use it to create the perfect lasagna noodles.  To make this a more heartier lasagna, saute up ground beef, ground chicken or even sausage for a meatier meal.

I used dried herbs in this recipe because I always have them on hand. If you have fresh just chop and double the measurements.

I make this type of dish often to use up left over chicken and sausage or you can purchase fresh and sauté for this delicious Paleo recipe. You can also use zucchini if you have some handy!

The combination of chicken sausage, spinach, artichokes with herbs and garlic make this an amazing pasta dish for lunch or dinner.

I sometimes use spaghetti squash, our favorite pasta! There are also some great gluten free pastas available now!

We have been on the go for all of December and tonight I felt like a comfort salmon dish.  I am starting HEWfit in a few weeks and decided salmon and pasta was a perfect dinner for us.  As an Italian pasta was always a frequent visitor but over the past several years it makes a rare appearance.  When we do eat pasta it's a small amount.  Tonight the salmon will be the star but it will be yummy for us to enjoy!

This pasta recipe is great for using up leftovers for a quick weeknight dinner! My kids always loved pasta bakes for dinner and so did the entire cheerleading team.. I miss those days..

Today I made an eggplant bake for a friend and had a few leftovers and thought I would use them up for my dinner. I took all of the ingredients, made 1/2 pound of pasta and dinner was ready in 25 minutes. My sauce had meat, peppers, onions, and mushrooms. You can also use leftover chicken, sausage or vegetables to create this easy yet delicious dish.

My kids are always asking me to make my famous macaroni and cheese when they come home to visit. I am also requested to bring this to cookouts or dinners. I always make a double batch and it’s funny because the host will say; “oh good I can save some for myself”.. I laugh and say; “there won’t be any left”. And there never is a single noodle left. When making this dish for a casual event use the disposal pans. No clean up!!

Sometimes I even like to add in fresh basil and left over sauté zucchini and summer squash! Of course you can add in lobster and ham if you want to make this an entire meal.

This is also this amazing cheese called Parrano – You can use this cheese to make a great macaroni and cheese. Try with just this cheese alone to enjoy the taste of Parrano!

In Germany we spend most of one day at a Farmer's Market.  It was also Oktoberfest so it was very busy and extremely amazing!  We defiantly ate our way through the market and even stopped for a few beers.  I brought home some truffle and knew it would go great with homemade raviolis.  

I like to combine semolina and AP flour for a delicate ravioli.  You can use all AP or even better us OO.

My raviolis are very easy to make and so much better than any store bought! The best part is the bragging rights!  Enjoy...

Since most of our diet is Paleo or Gluten Free. We do not suffer from Celiac but love how we feel eating this lifestyle. When I decide that pasta is on the menu then I go all the way and make it homemade. I love making my own pasta and ravioli's. I have the attachments for my kitchen aid and it works great. As a home chef it is all the equipment I need to make fresh pasta.

This is what I did to create this recipe. I happened to have fresh spinach in the house and decided to use it in the raviolis with ricotta cheese and I even added a little shredded mozzarella since I had about 1/2 cup left in the refrigerator.

I even have one of those cute ravioli to give ridges that made me happy! You can use a knife but I love having fun kitchen gadgets. Enjoy

Pasta, Sausage and Peas

I love my one-pot recipes and even though I needed a pan to boil the pasta there was no need for a colander nor a platter or bowl to serve the dish.  My beautiful pan served as a perfect serving dish! All of my dried herbs are from Simply Organic!

I used 2 hot and 2 sweet chicken sausage which added amazing flavor to the sauce!  You can also just add the frozen peas into the hot sauce!  This is a 30 minute meal perfect for a family of 4.  

When we enjoy pasta from a box there is only one I will serve my family (and myself). It has to be DeCecco Pasta!  

Tip: You can add in onion, peppers, zucchini or any other vegetables you have handy in the refrigerator.  Go ahead clean out that crisper draw and make this a hearty family meal!

If you love this recipe but don't want to use pasta!  Take a spaghetti squash and poke about 10 holes using a long metal skewer.  Put in the microwave for 10 minutes.  Let cool, slice, remove seeds then take a fork and add strands into the sauce.  Paleo dinner served...
