Any dish that ends with Milanese is a favorite of mine.  You can use this same recipe and use pork or veal to enjoy Milanese a little different yet amazing.

Muffins with Pancetta and Herbs

Some mornings we just want muffins and a cup of coffee. I am Italian and there is always pancetta in my refrigerator. Using fresh herbs in these muffins makes them extra special but if you don't have them handy go ahead and use dried.

*CHEFS NOTE* A little tip on finely chopping pancetta: place in the freezer for 15 minutes to firm then you will find it easier to chop with a sharp chefs knife.

Portobello Ragu

This Portobello ragu is hearty and flavorful. I love to serve over zucchini noodles or with sautéed chicken. You can use fresh or dried herbs for this ragu. My recommendation would be to add the fresh herbs in towards the end of the cooking process but the dried herbs can go in right away!

Risotto with Peas and Pancetta

I have loves peas since as long as I can remember. My nana and I would always enjoy peas with almost every meal. Our favorite would be to pour our tomato sauce.

What makes my Risotto with Peas and Pancetta special is I cook the pancetta in the same pan as the risotto!  We took this picture at NBC Connecticut and added the pancetta at the end of the segment then shared with the staff.  What a great day..
