Banana Protein Crepes

Getting ready for my HEWfit Challenge and wanted to test out a new recipes.  I am thrilled because my husband even loved them.  At first I was planning on making pancakes but due to the consistency of my batter they were perfect crepes.

I used protein from my friends at Inner Amour.

The next time make them I am adding blueberries in the batter.

I batch made 4 crepes.

I just love pancakes and these are so easy and fluffy!  Really..... Give these paleo pancakes a try!  So yummy.....

PS:  Try adding a little almond butter in them too!

Did you know all of your Paleo needs are available at Shop Rite.  I love my E. Hartford or Manchester, CT stores.  The prices on you coconut flour, almond flour and all of your other needs are much less than the expensive markets.  They also have local produce and many organic meats.  Check them out!

This is a great recipe to use leftover roasted cauliflower or you can cut up a fresh one and cook. I am including the leftover version below.

Lemon Blueberry Pancakes

I love pancakes and can eat them every day!  I woke up and wanted blueberry pancakes and these were created!  If you love paleo pancakes then give these yummy ones a try!  I have a griddle pan included with my wolf stove and use it every day and it makes the best pancakes!

I got mine really hot to about 400 degrees to make these!

Paleo Scallion Pancakes

I got a big bunch of scallions at our local farmers market and decided to make my cabbage and cauliflower fried rice.  I have been stocking up on Bob Mills Paleo Baking Flour and decided to give this a try.  

Just something for you to remember when making these!  You know when your watching the grilling cooking shows and  the Chef always says "let the meat talk to you"  Don't flip until the meat is ready.  Do you know what that means?  When you are moving your spatula around the pancake be sure not to work it too much.  When it's ready to flip - the pancake will let you.
