3 ingredient Kale Chips

Kale chips are super easy to make or can be super easy to mess up!  We know that is true.  They are just so yummy...

Here is what you need to know to make the perfect crispy kale chips!

First take your kale and remove the ribs. You can easily do this by holding the bottom rib from the leaf with one hand and use the other hand to grip onto the rib and move your hand up the leaf separating the two from each other.  Next, either chop or tear the leaves into small pieces and place in your colander.  Rinse throughly then dry.  I like to lay paper towels down on my counter then create an even layer of the leaves.  Top with another layer of paper towels and press down.  You want the leaves dry before baking them into chips.  If they wet... they will burn!

Italian Meatloaf Stuffed with Greens and Proscuitto

I came up with this recipe for our neighborhood get-together!  I never served a "meatloaf" for a dinner party but this was certainly a gourmet dinner and the presentation was perfect.

I served with a arugula, red onion and tomato salad and dressed with extra virgin olive oil and lemon.  I even made a quick pan gravy and what a hit!

Sauté White Fish and Greens

Meal preparation is easy if you are organized.  I love to make a few meals for the week and have them ready to pull out of the freezer in the morning and just warm to enjoy for dinner.

This recipe is perfect.  I just lightly brown both sides of the fish and slightly cook my greens.  I store in the refrigerator to enjoy within a day or 2 them just warm up in the pan for an easy dinner.  

It's really fun to be healthy!
