I am really enjoying creating bowl recipes!  It's fun enjoying all of the flavors together.  Not to mention we just love meatballs in our family.  I hope you love this recipe!

Cindy's Note:  You can use spaghetti squash, rice noodles or even zucchini noodles.  I used linguini just because but also made it again and used spaghetti squash.  Very yummy!!!  

Spaghetti Squash - After I baked the squash and removed the strands then put in a bowl.  I added fresh ginger, salt pepper and chopped cilantro then drizzled a little sesame oil!  Amazing....

Sorry I took the picture before we garnished and ate!  We just couldn't wait.....

We only eat corn late summer when it's tender and sweet.  At the lake house we entertain often and preparing this dish in advance was a great way to feed a crowd while enjoying local summer corn!  We loved the spice from poblano and jalapenô peppers!  

Go ahead and give this a try.  If you can't find local fresh corn then use frozen corn.  (I actually added a frozen bag of white sweet corn as 4 extra friends were coming over and I was afraid there would not be enough).

Making these gourmet meatloaf sliders were a big hit at a party I was hired as the Chef for an engagement party.  I didn't use those standard slider buns!  On No...  I used a gourmet french loaf then added my homemade ketchup and roasted red peppers.

Stuffing is my favorite side dish!  I just love to pour gravy over on Thanksgiving then use it multiple ways for left overs!  

What I love to do with my left over stuffing?

  • Make an open-faced sandwich with turkey, stuffing, cranberry sauce and gravy.
  • Turn stuffing into muffin cups.  Add in left over green beans, sweet potato casserole and chopped up turkey!  Of course, gravy...  We just love our gravy.
  • Bake in a sheet pan then cube - re-bake and use as croutons in your turkey soup.
  • Make a turkey pot pie and use your stuffing as the cover..

Chicken Cordon Bleu is a thin breaded cutlet with ham and cheese rolled inside.  I love this dish because it's perfect for 2 or 6 or 8.  You can get these prepped in advance, store in the refrigerator and when you are 35 minutes to eat just bake and serve.

Paleo Fruit Tart

If you know me or follow me....  Then you know my granddaughter Brooke.  We love our time together and she loves to bake!  I am a cook and she is the baker. When we are together it's mostly baking we do.  It's great that she can fly down to Florida in the winter during her school breaks as an unaccompanied minor. Then again she has been traveling with me since she was 2.

We were at our farmers market on Sunday and got our vegetables along with strawberries and blueberries. I already had bananas (which we are making our pudding with in this recipe) and the other ingredients for a fruit tart.  My tart pan is 11 inches so this recipe is measured to fit.  Adjust if you are using a 9 inch.
