I was about to go grocery shopping and knew that I should have lunch first! Rule #1 eat before you go food shopping… I had all of these ingredients handy and it is cold outside so this was a perfect lunch for me!

I make this type of dish often to use up left over chicken and sausage or you can purchase fresh and sauté for this delicious Paleo recipe. You can also use zucchini if you have some handy!

The combination of chicken sausage, spinach, artichokes with herbs and garlic make this an amazing pasta dish for lunch or dinner.

I sometimes use spaghetti squash, our favorite pasta! There are also some great gluten free pastas available now!

Making a torte is one of my favorites.  The name sounds fancy and they look so beautiful on a cake stand.  I love the combination of chocolate and almonds in this torte, served with a glass of red wine sitting by the fire.  The perfect sweet ending!

It's after Christmas and looking at my leftover ingredients and decided to make this paleo dessert!  I am enjoying more and more of these desserts lately and so is my family.  i am not big on desserts (which includes chocolate) but having a little bite with my espresso seems to be a pretty nice way to end my day!

I love cannoli's!  Let's just start there.  I remember when I was little my Nana and I would spoon out all of the ricotta filling from the shell of the cannoli and would laugh like little kids.  I really miss her especially around the holidays.  I just hope I am as good as a grandmother as she was to me!  

I came up with these cookies as it has the ingredients as a cannoli but in the form of a cookie.

I love custard and coconut with a little chocolate so this recipe was created.  I was just in my kitchen looking in the cabinet and this is what happened.  So good..  However, I ate the left over custard that was in the pan before dinner.  Needless to say I didn't eat my dinner :)

This recipe was inspired by Alex Guarnaschelli while i was watching the food network during the Thanksgiving weekend.  I just love cauliflower and have an herb garden which includes parsley therefore this recipe was created!  I also always have canned coconut milk on hand for my smoothies.  

During her segment she suggested the cauliflower be marinated for at least 2 hours.  I marinated for exactly 2 hours.  She said it could be marinated overnight and I don't think that's a great idea because I marinated one overnight at first and the coconut over powered the other favors so this recipe is my #2 cauliflower.

I was home alone for a few days after Thanksgiving and made this for me.  It lasted me several meals and I enjoyed every bite.  My parsley pesto is more like a dressing then a pesto.
