Sausage Bundles

This is a recipe I created a few years ago for my husband. I make these for all of our dinner parties, but always have a few in the freezer to pull out for an amazing and delicious appetizer.

These are made ahead—it does take a few hours to make these little bundles, but making plenty in advance means less work later! Separate into portion sizes and freeze. You bake these without defrosting.

Sausage, Peppers and Onions

When I was a little girl my Nana would take us to the Italian feast in Lawrence, MA every labor day weekend. We would enjoy many Italian treats but always had to indulge in a sausage and pepper grinder. They were so amazing! I still love making sausage and peppers especially in the summer at our lake house. I can make a huge pan right in the oven and keep it warm while we are all out enjoying the lake and when we are ready to eat….. Sausage and Peppers are ready to go! It is funny to me how everyone lights up for this simple dish! You can take the left overs and make a frittata for breakfast or add to your Sunday sauce! The enjoyment can last for meals and meals!

The directions below show you two ways to prepare this dish! You can also make this on your outdoor grill. To do that I grill the sausage on the grill for about 12-15 minutes. Using a vegetable basket grill peppers and onions separately until they are soft and tender. Keep warm until ready to serve.

Modify this recipe depending on how many you are serving. I always make extra as they are great warmed up later or used up in other recipes!

I was watching the foodnetwork and Bobby Flay was making this recipe and OMG it looked so good but I wanted to make it a little healthier so this is what inspired me.  I just LOVE shallots and OMG was this side dish amazing. I served it with my Stuffed Turkey and enjoyed this dinner with my lake neighbors and hubby.  

My husband pared this dish with our favorite Peju wine!

Cindy's Note: You can make the shallots up to a day in advance and just store in the refrigerator until you made the spinach and kale.  (that is what I did)

Sauté White Fish and Greens

Meal preparation is easy if you are organized.  I love to make a few meals for the week and have them ready to pull out of the freezer in the morning and just warm to enjoy for dinner.

This recipe is perfect.  I just lightly brown both sides of the fish and slightly cook my greens.  I store in the refrigerator to enjoy within a day or 2 them just warm up in the pan for an easy dinner.  

It's really fun to be healthy!

I just love salmon! I was at the fish market here in Sturbridge, MA (near our lake house) and he had beautiful salmon. (Yes I said beautiful) and we normally only need a pound for the 2 of us but he had 2 pieces left that came to about 1.30 and I took it all thinking there would be some leftover for lunch! If you are in Sturbridge check out C&R fish market! He even has fresh seaweed salad and homemade seafood salad that is amazing!

I received a few bottles of Terry Delyssa olive oil.  I used their organic extra virgin olive oil in my vinaigrette and we loved it!  Thank you..  xo

I don't use cilantro often but thought it would be a great addition to my salmon and it was!  Give my Sautéed Salmon with Cilantro Vinaigrette recipe a try!  A great paleo recipe and gluten free but most of all this is delicious.  Enjoy

PS - I grilled the salmon but you can also use a large sauté pan!
