If you have other leftovers add them in such as sweet potatoes, celery, red peppers, carrots, etc.  Be creative and enjoy this delicious soup!

I made this soup using leftover broccoli and cauliflower in the refrigerator.  I actually made the soup and refrigerated for 2 days then added to the pot and once I brought to a almost boil I added in the cream.  It was a little thick so I added about 1/2 cup more of vegetable broth.  This soup was really good.  I may add a little red pepper flakes in next time!

I love Mediterranean salads and always have different sides handy at the lake! I grilled salmon  and vegetables then served with this Cucumber and Feta Bulgur Salad! What another great evening at the lake! Enjoy

PS- I prepared this salad earlier in the day and kept in the refrigerator for dinner!  Before serving I gave it a little stir then drizzled a little extra virgin olive oil.

At the lake we enjoy our "happy hour" and I love making something different especially when our lake neighbors are over.  Since I am Italian expect lots of garlic!
