Pork Tenderloin with Peppers and Onions

Here is another great one-pot meal that is also ready in 30 minutes!  We just love our Paleo Recipes and especially one-pot that are great for entertaining.  I made this for friends and brought the pan to the table!  Perfect....

If you don't have Cindy's Tuscan Blend then use the following (this is not my blend but a good substitute for this recipe) 

  1. 1 teaspoon dried rosemary
  2. 1 teaspoon dried basil
  3. 1/2 teaspoon dried thyme

Sauté White Fish and Greens

Meal preparation is easy if you are organized.  I love to make a few meals for the week and have them ready to pull out of the freezer in the morning and just warm to enjoy for dinner.

This recipe is perfect.  I just lightly brown both sides of the fish and slightly cook my greens.  I store in the refrigerator to enjoy within a day or 2 them just warm up in the pan for an easy dinner.  

It's really fun to be healthy!

Spicy Vegetarian Pad Thai

I just love pad thai but when eating out its very high in sodium and that discourages me to order this dish.

I sometimes make it myself and since I had a container full of bean sprouts it seemed like a perfect lunch!

If you are looking for a paleo version then check out this recipe using zucchini. It's really good as well but today I felt like mixing it up a bit.
