Vegan Sloppy Joes over Zucchini Noodles

As we are preparing for Daniel Fast at my Church I wanted to create some recipes to enjoy while we focus on prayer during this 21 day fasting.  This one was a big hit as I was testing the recipe and invited my girl friends over.  Enjoy xo

 

 

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, minced
  • 1 carrot, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1 cup lentils, rinsed
  • 2 cups vegetable broth or water
  • 1 (15 ounce) can organic, no salt chopped tomatoes
  • 2 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 3 zucchini, spiralized
  • 1-2 cloves garlic, minced

Directions

  1. Heat a large sauté pan over medium heat. Add oil once hot. Toss in onion, garlic, and bell pepper. Season with salt and pepper.  Sauté for about 4-5 minutes, stirring often.

  2. Add chili powder, cumin, and paprika. Stir to combine. Add lentils and cook for 30 seconds.

  3. Add vegetable broth or water in a pan with lentils over medium-high heat.  Bring to a low boil, then reduce heat to a simmer and cook uncovered for about 15-18 minutes, or until tender. 

  4. Add tomato sauce, chili powder, cumin, and paprika. Stir to combine.  Continue cooking the mixture over medium-low heat until completely warmed through and thick, stirring occasionally - about 5-10 minutes.

  5. Taste and for any additional seasoning.

  6. Take spiralized zucchini and let sit in a colander for 30 minutes seasoned with salt. Then lay on a paper towel. Drain all of the liquids.   In a large sauté pan over medium-high heat add in about 3 tablespoons of oil.  Add zucchini and a few cloves garlic, minced to the pan and cook for about 3 minutes; tossing around with tongs. Remove immediately and top with sloppy joes!
