As we are preparing for Daniel Fast at my Church I wanted to create some recipes to enjoy while we focus on prayer during this 21 day fasting. This one was a big hit as I was testing the recipe and invited my girl friends over. Enjoy xo
Heat a large sauté pan over medium heat. Add oil once hot. Toss in onion, garlic, and bell pepper. Season with salt and pepper. Sauté for about 4-5 minutes, stirring often.
Add chili powder, cumin, and paprika. Stir to combine. Add lentils and cook for 30 seconds.
Add vegetable broth or water in a pan with lentils over medium-high heat. Bring to a low boil, then reduce heat to a simmer and cook uncovered for about 15-18 minutes, or until tender.
Add tomato sauce, chili powder, cumin, and paprika. Stir to combine. Continue cooking the mixture over medium-low heat until completely warmed through and thick, stirring occasionally - about 5-10 minutes.
Taste and for any additional seasoning.
Take spiralized zucchini and let sit in a colander for 30 minutes seasoned with salt. Then lay on a paper towel. Drain all of the liquids. In a large sauté pan over medium-high heat add in about 3 tablespoons of oil. Add zucchini and a few cloves garlic, minced to the pan and cook for about 3 minutes; tossing around with tongs. Remove immediately and top with sloppy joes!
