Tuscan Herb Chicken with Artichokes, Peas and Sauce

I received a sample order of Dei Fratelli and knew chicken was on the menu and decided to make a sauce.  What Italian doesn't love a great sauce with Sunday dinner. OMG I can't believe how amazing the tomatoes were and it really made this meal complete.  You will be seeing many new recipes using their products.  

I have my new Tuscan blend coming out and since you don't have it yet here are the spices to use until you get it for your cooking. (this is not my blend but a good blend for you to use.  I am not giving out my secret just yet)

Tuscan Blend

  • 2 teaspoons dried basil
  • 2 teaspoons dried marjoram
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon red pepper flakes (optional)



  • Olive oil
  • 1/4 cup yellow onion, chopped
  • 2 tablespoons shallot, diced
  • 2 cloves garlic, diced
  • 1 teaspoon sea salt and more
  • 3/4 teaspoon freshly ground pepper and more
  • 1 pound boneless chicken, trimmed and cubed
  • Tuscan blend
  • 1 can artichokes, quartered (drained)
  • 1 cup fresh English peas
  • 4 cups homemade sauce (recipe below)


  1. In a large sauté pan over medium-high heat add in 2 tablespoons of olive oil.  Add in onions and shallots and let cook for 2 minutes.  Add in garlic and 1/2 teaspoon of salt and 1/4 teaspoon of pepper.  Let cook for another minute then remove from pan and place in a small bowl.

  2. Take the chicken and place in a large bowl or sealable bag.  Add in Tuscan mix and coat all of the chicken evenly.

  3. Add in 2 more tablespoons of oil and once hot add in chicken.  Let cook for about 10 minutes turning often using a wooden spoon.  Brown all sides!  Add onions and garlic back into the pan along with the artichokes, peas and remaining salt and pepper.  Toss around then cover and reduce to medium and let cook for 5 minutes

  4. Add sauce to the pan and bring to a simmer then lower the temperature and keep covered until ready to serve.  

  5. Here is  a quick and delicious sauce!  I used all Dei Fratelli products so go and find their sauce and use it today..

    Tomato Sauce in Minutes

    • 1 28 ounce of petite diced tomatoes
    • 1 14 ounce can of tomato puree
    • 1 7 ounce can of tomato paste
    • 1 teaspoon sea salt
    • 1/2 teaspoon freshly ground pepper
    • 1 1/2 teaspoon dried basil
    • 1 teaspoon dried parsley
    • 1 teaspoon dried oregano
    • 1 teaspoon garlic powder
    • 1/2 teaspoon dried thyme
    • 1/4 teaspoon red pepper flakes

    To make the sauce.  Add the petite diced tomatoes and tomato puree in a sauce pot over medium high heat.  Take the tomato puree can and add 1/2 of water then pour into the diced tomatoes can then pour into the pan. Bring to a boil then add in tomato paste.  Press the paste along the edges of the pan to smooth into the sauce.  Add in the remaining ingredients and lower to simmer for 20 minutes.
