Tarragon Chicken and Artichokes

I have been cooking and cooking and cooking that I decided to make a 1 pot meal that was easy yet full of flavor.  I had everything in the kitchen to create this Tarragon Chicken and Artichokes dish.
This was so easy… enjoy

PS – Sorry I don’t have a picture of the completed dish. My husband came in late from a business trip and by the time we had a glass of wine, caught up from the day then ate I just forgot to take the final picture. I hope you believe me on how delicious and easy this was! A one pot meal..perfect



  • 1 pound boneless breast chicken
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 tablespoon coconut flour
  • 3 tablespoons dried tarragon
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 1 can artichokes, quartered
  • 1 jar of your favorite marinara sauce


  1. Take chicken and on a clean poultry safe board cut into cubes. Place in a large sealable bag. Add chicken, salt, pepper, flour and tarragon. Seal and shake to coat all the chicken.

  2. Heat a large sauté pan or braising pan (that has a cover) over medium-high heat. Add in olive oil and butter. When the butter melts and begins to bubble add in coated chicken. Cook until all sides have browned. About 7 minutes.

  3. Add in garlic and artichokes to the pan and let cook for 3 minutes.

  4. Lower the temperature to a simmer and add in sauce. Cover for 5 minutes.

  5. Enjoy!


    Note: This dish goes great with pasta, over spaghetti squash, zucchini noodles or your favorite roasted vegetables!
