Sweet Potato Brownies

I have so many delicious recipes using sweet potatoes and my granddaughter loves chocolate and we made these together after our vacation to Florida.  Brooke wasn't sure at first about the sweet potato but we gave it a try and really liked it and hope you do too!

Tip: If you don't have a sweet potato handy then use sweet potato puree (keep it in your pantry!) or you can use canned pumpkin puree.



  • 1 large sweet potato (you need about 1 cup)
  • 1/4 cup coconut flour
  • 1 tablespoon arrowroot powder
  • 1/3 cup coconut sugar
  • 2 tablespoons cocoa powder, unsweetened
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 3 large eggs, room temperature
  • 1/4 cup coconut oil, melted and cooled (plus more for coating pan)
  • 1/2 teaspoon vanilla
  • 3/4 cup mini-chocolate chips


  1. There are 2 ways to prepare your sweet potato.  Now I would hate to have you put your oven on for 40 minutes to make just 1 potato.  I recommend you add a few extra in the oven for dinner.  

    To prepare in the oven - preheat oven to 300 degrees and pierce a few times with a fork. Bake for 30-40 minutes.  Depending on the size.  To text press the center of the potato and it should press down easily.  Reduce oven to 350 degrees.

    Or sill pierce a few times with a fork and place on a plate then microwave for 5 minutes then flip and if it is still hard set for another 2 minutes.  Let cool then peel and place in a bowl and mash with a fork.  

  2. Let sweet potato cool until it’s easy to handle then remove skin with the back of a spoon. Add to a large mixing bowl.

  3. Whisk eggs in a small bowl then add to the mixing bowl with the sweet potatoes. Add in coconut oil, coconut sugar and vanilla. Whisk together.

  4. Add in coconut flour, arrowroot power, cocoa powder, baking powder, cinnamon and salt. Combine all ingredients well.

  5. Fold in chocolate chips.

  6. Prepare a 8x8 baking dish by brushing melted coconut oil or coconut spray to coat.

  7. Add in batter and bake for   30-33 minutes.
