Sweet Potato and Apple Fritter

I make some sort of "cutlets" a few times a week.  Sometimes I call it "Milanese" because it sounds sexy! Tonight I wanted to make something with sweet potatoes on the side and came up with this recipe.  The apple really adds an extra layer of flavor.  

P.S.  These are really good! 

 

 

Ingredients

  • 1 sweet potato
  • 1 apple
  • 1/4 cup arrowroot
  • 1/4 cup tapioca flour or GF flour
  • 2 large eggs
  • 1 1/2 teaspoon kosher salt
  • 3/4 teaspoon freshly ground pepper
  • 1-2 tablespoons olive oil
  • 1-2 tablespoons unsalted butter

Directions

  1. Preheat oven to 350 degrees.  Line a baking sheet with foil or parchment paper.

  2. Peel and shred potato and apple using a box grater.  Add to a bowl.  

  3. Add in arrowroot flour and tapioca flour, eggs, salt & pepper.  Combine together.

  4. Depending on the size of you pan you may need to do these in batches. Heat a large sauté pan over medium-high heat.  Add in 1 tablespoon of oil and 1 tablespoon butter per batch.  Add 2 tablespoons of mixture to the pan for each fritter.  Press down using the back of the spoon to create the perfect size. Cook each side for 3 minutes or until brown.  Place on the prepared baking sheet.

  5. Once you cook all of your fritter bake for 20 minutes.  

    Serve and Enjoy

     

     

    Cindy's Note:  Heat the left overs in the morning and top with a poached egg! A great way to start your day.
