Spinach and Smoked Salmon Salad with Lemon Dill Dressing

We are a very social couple and many times we have last minute dinner parties. Luckily I had all of the ingredients handy and created this delicious salad and again it looked gourmet but took me under 10 minutes to prepare!

*CHEFS NOTE* If you are at your local fish market and smoked salmon is on sale then pick up a little extra then divide and freeze for later! I love surprising my husband with a smoked salmon and scrambled eggs breakfast after a long business trip!


  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoon fresh dill, chopped
  • 1 teaspoon sea salt
  • 3/4 teaspoon freshly ground pepper
  • 6-8 cups baby spinach
  • 6 ounces thinly sliced smoked salmon, cut crosswise into 1/2 inch ribbons
  • 1 medium English cucumber- peeled, halved lengthwise, thinly sliced
  • 2 scallions, thinly sliced


  1. In a large bowl, whisk the olive oil with the lemon juice and dill and season with salt and pepper

  2. Add the spinach, smoked salmon, cucumber and scallions to the bowl and toss well.

  3. Transfer the salad to plates and serve.
