Spaghetti Squash Sandwich Buns

I recently cooked for over 100 people at Sons and Daughters to benefit Place of Hope.  One on the dishes included my Tuscan Burgers from my Cookbook Paleo Italian Cooking.

I had ordered plenty of Spaghetti Squash from Mr. Greens and made these amazing sliders!

You can also make them full size to fit your burger.  Cooking them in coconut oil gave them extra flavor.

Chefs Note!  If the squash batter seems to have a lot of liquid just add in more tapioca flour. Just a tablespoon at a time!

 

Ingredients

  • 1 medium spaghetti squash
  • 1/4 cup tapioca flour
  • 1 large egg
  • 1 tablespoon Italian seasoning
  • 1 clove garlic, minced
  • 1/2 teaspoon baing soda
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • Coconut oil for frying

Directions

  1. There are 2 ways to cook your spaghetti squash.      

    The first is to place the squash whole on a baking sheet and use a long metal skewer and poke about 10 wholes. Bake in oven at 400 degrees for 35-45 minutes or until it is soft at the touch.       Let cool then slice in half, remove seed layer then use a fork and remove strands into a bowl. OR If you are in a hurry. Place spaghetti squash (poke a few wholes) in a microwave safe bowl and set on high for 8-9 minutes. Let cool and follow above instructions.

  2. Add squash strands in a colander for about 30 minutes to allow it to dry a little and release any excess liquid. *Add a clean towel over the strands and place a heavy pan or bowl on top to help speed up the process.

  3. Add spaghetti squash strands to a large bowl then coat with tapioca flour.

  4. In a separate bowl whisk egg then add to the squash along with Italian seasonings, garlic, baking soda and salt.

  5. Use an ice cream scoop and grab the spaghetti squash mixture then place in the center of your hand. Press down as you are making a burger. Set on a platter and continue until finished.

  6. Heat a large grill pan or sauté pan over medium-high heat. Once hot add in a tablespoon of coconut oil. Cook each side of the bun until brown (about 2 minutes) Remove and continue until done by laying each bun on a paper towel lined plate.  Enjoy with your favorite burger!

    can you make the sandwich buns ahead of time and if so whats the best way to store them
