This recipe was created as I pulled out ingredients from the refrigerator. It was surprisingly really good so I wanted to share with you! xo
Heat a large sauté pan over medium heat. Add in a couple tablespoon of oil. Once the oil is hot add in Cauliflower florets. Season with salt and pepper. Cook until golden and fork tender; about 10-12 minutes. Move from pan and put in a bowl; set aside.
Add another couple tablespoons of oil to the same pan over a medium-low temperature. Add in garlic and let cook for 30 seconds. Add in roasted red pepper and let cook for a minute. Toss into a blender along with the tofu. Blend until smooth.
Toss the cauliflower pack into the pan over a medium temperature along with the vegetable puree. Season with red pepper flakes.
In a small bowl combine almond meal and hemp or flax together then add to pan. Stir around. To serve drizzle a little EVOO and fresh parsley or cilantro.
