Sautéed Cauliflower with Tofu and Vegetables

This recipe was created as I pulled out ingredients from the refrigerator.  It was surprisingly really good so I wanted to share with you!  xo

Ingredients

  • 1/4 cup olive oil
  • 1/2 large head cauliflower, cut into florets
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, chopped
  • 1 roasted red pepper, seeded and chopped
  • 2 tablespoons soft tofu
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons almond meal
  • 1 tablespoon hemp seeds or flax seeds
  • EVOO and fresh parsley or cilantro

Directions

  1. Heat a large sauté pan over medium heat. Add in a couple tablespoon of oil.  Once the oil is hot add in Cauliflower florets.  Season with salt and pepper.  Cook until golden and fork tender; about 10-12 minutes.  Move from pan and put in a bowl; set aside.

  2. Add another couple tablespoons of oil to the same pan over a medium-low temperature.  Add in garlic and let cook for 30 seconds.  Add in roasted red pepper and let cook for a minute.  Toss into a blender along with the tofu.  Blend until smooth.

  3. Toss the cauliflower pack into the pan over a medium temperature along with the vegetable puree.  Season with red pepper flakes.  

  4. In a small bowl combine almond meal and hemp or flax together then add to pan.  Stir around.  To serve drizzle a little EVOO and fresh parsley or cilantro.
