Rotisserie Chicken and Caramelized Onions Cauliflower Pizza

I promise you won't miss the standard flour pizza crust!  This is amazing especially if you love cauliflower as much as I do.  Using a store bought Rotisserie Chicken makes this pizza amazing.  I love cooking up large batches of caramelized  onions to use during the week. 

Here is the recipe for my Caramelized Onions!



  • 1 head cauliflower, stalk removed
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 2 eggs, lightly beaten
  • 3 tablespoons tapioca flour
  • 1 Rotisserie Chicken
  • 1 cup of Caramelized onions
  • 1/2 cup shredded mozzarella or parmesan (optional)
  • Favorite red sauce


  1. Preheat oven to 400 degrees F. Line a baking sheet or pizza stone with parchment paper.

  2. Cut  cauliflower into florets then toss in your food processor.   Pulse until it's broken up to very small pieces.  Place in a glass bowl.  Add about 1/4 cup of water then microwave for7-8 minutes.  Drain any water.  Let cool.

  3. Add Italian seasonings, salt, pepper, garlic powder, eggs and tapioca flour. Stir until all ingredients are incorporated and evenly distributed.  Either add the mixture to the baking sheet or form on your pizza stone.   Bake for 10 minutes.

  4. Either make and have your prepared red/tomato sauce ready.  Meanwhile pull apart the chicken.  Remove the partially baked pizza crust from the other and top with chicken, caramelized onion then cheese.  Bake for another 10 minutes.   Slice and Enjoy.

  5. Note:  If you opt out cheese then add chopped cherry or grape tomatoes and drizzle with a little EVOO.  This pizza is also great with baby spinach.  

    We used extra sauce from my portobello ragú and the mushrooms added another layer of flavor and texture to the pizza.
