Ricotta Cheesecake Bites

My ricotta cheesecake bites are the perfect summer time dessert or perfect for an afternoon treat! This fresh treat can be topped with fresh fruit, sauces, chocolate. Give them a try and no-oven involved....




  • Ingredients for crust
  • 8 fresh dates (seed removed)
  • 1/2 cup walnuts
  • 2 ounces chocolate
  • Ingredients for Cheesecake
  • 2 8oz packages cream cheese, room temperature
  • 1 1/4 cup ricotta cheese (whole milk)
  • 1 tablespoon organic honey
  • 1 teaspoon vanilla
  • 1 tablespoon lemon zest


  1. Add all crust ingredients in your Ultra Wide Mouth™ Series Food Processor and blend until smooth.

  2. In a large bowl combine all of your cream cheese ingredients and mix using your KitchenAid® 3-Speed Blender.

  3. Prepare a 9x13 baking dish by lining with parchment paper then coat with cooking spray or brush with butter.

  4. Press crust evenly in baking dish. Next add in cream cheese mixture and spread to fit the baking dish.

  5. Refrigerate for 5-6 hours then remove and cut into bite size pieces

  6. Top with preserves, fresh fruit or even melted chocolate.
