Ricotta Cheese Cake

This was a "just because" new recipe!  I love ricotta and we don't indulge often but since we are entertaining tonight it seemed right!  Not to mention it's amazing!



  • 3 pounds ricotta cheese
  • 1/2 cup coconut sugar
  • 1/8 teaspoon sea salt
  • 6 large eggs
  • 2 egg yolks
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice, fresh from orange
  • 1/4 cup heavy cream
  • 1 teaspoon almond extract
  • 1/4 cup almond slices


  1. Take ricotta cheese and lay on a cheese cloth in a colander.  Let sit for 30 minutes to drain liquid.

  2. Preheat oven to 325 degrees.  Take a spring form pan and brush with oil or melted butter.  Wrap outside bottom of pan. (It just prevents a mess if any leakage in the oven.  Place on a baking sheet.

  3. Add ricotta to your stand mixer on low and mix for about 20 seconds.  Add in sugar, salt egg whites while mixing then the 2 yolks one at a time.  Add in orange zest, orange juice, cream and almond extract.  Mix until smooth.

  4. Pour mixture into your prepared pan then top with almond slices.  Bake for 1 hour and 30 minutes.   Remove from oven and let cool then release the pan and set on a stand. Enjoy warm or cold.
