BBQ Pulled Pork – Pork Tenderloin

I have a couple of pulled pork recipes you can look at Slow Cooker Italian Pulled Porkand Cajun Pulled Pork which are both popular at our house.

During the summer months we move up to our lake house and it is when I clean out my refrigerator and freezer. I found a 5 pound pork loin tenderloin and brought it to the lake and decided to use it. I wanted something easy so we can enjoy the lake but serve a fabulous dinner!

I always use pork shoulder and was nervous but went for it. This is what I did and everyone enjoyed.. It was so good. I even made a coleslaw with only 4 ingredients! check it out…

You can make the BBQ a paleo recipe by omitting the brown sugar!

Ingredients

  • 1 (14.5 oz) can petite diced tomatoes with juice
  • 2 teaspoon onion powder
  • 3 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 2 tablespoons brown sugar (optional)
  • 1 tablespoon dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sweet paprika
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1 teaspoon cayenne pepper
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon freshly ground pepper
  • 3 teaspoon hickory flavored liquid smoke
  • 3/4 cup pineapple juice

Directions

  1. Add all of the ingredients to your slow cooker set on high and whisk then stir until combined.

  2. Ingredients

    • 5 pound pork loin tenderloin
    • 1 tablespoon olive oil
    • 1 teaspoon sea salt
    • 3/4 teaspoon freshly ground pepper
    • 2 white onions, half and quartered

    Directions

    1. Take tenderloin and rub with olive oil all over. Season with salt and pepper.
    2. Place in the slow cooker and surround with onions; cover and set on high for 4 hours turning over at 2 hours.
    3. Reduce to medium for an additional 2 hours.
    4. Remove tenderloin from slow cooker and place on a clean work surface. Remove and discard onions.
    5. Using 2 forks shred pork and place back in slow cooker. Keep slow cooker on warm or low until ready to serve your pulled pork with you delicious homemade BBQ sauce.
    6. Easy Coleslaw/u>

          Just combine all together!

       

      • 1 bag shredded cabbage and carrots
      • 3 tablespoons mayonnaise
      • 3 tablespoons greek yogurt
      • Salt and Pepper

    Note: Serve with your favorite buns with coleslaw, pickles, sliced red onions and spicy mustard.
