Paleo Pumpkin Bread Pudding

I have used this paleo bread recipe in to many desserts or just sliced and enjoyed with a cup of tea.

 

I just love my Le Creuset Pumpkin Cocotte's and they are just perfect for this dessert!

Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/3 cup coconut sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 3 large eggs, whisked
  • 1 teaspoon vanilla
  • 1/3 cup coconut milk, full fat
  • 2 tablespoons coconut oil, melted (plus more)
  • 1 loaf – paleo bread (above)
  • 1 1/2 cup coconut cream
  • 5 large eggs, room temperature
  • 3/4 cup coconut sugar
  • 1 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1 1/2 teaspoon vanilla
  • 2 cups pumpkin puree
  • Coconut oil, melted for coating baking dish

Directions

  1. Directions for Pumpkin Bread:

    Preheat oven to 350-degrees F

  2. In a medium mixing bowl add almond flour, coconut flour, coconut sugar, baking soda, baking powder, salt, ginger, cinnamon and cloves then mix with a fork to ensure all ingredients are smooth.

  3. In a separate medium bowl combine eggs, vanilla and coconut oil.

  4. Pour wet ingredients into dry and combine together.

  5. Prepare a loaf pan by brushing with coconut oil to coat.

  6. Bake for 35-40 minutes or until a toothpick comes out clean after inserted.

  7. Remove from oven and allow to completely cool before removing from pan

  8. Directions for the Paleo Pumpkin Bread Pudding:

    Preheat the oven to 350 degrees F.  Brush an 11×7 baking dish or individual ramekins with melted coconut oil.

  9. Cube up the loaf of paleo bread and layer in the prepared baking dish.

  10. In a large bowl, combine the coconut cream, eggs, brown sugar, spices, and vanilla and mix well to combine. Mix in the pumpkin puree. Combine the bread, to combine into the mixture.

  11. Pour over the paleo bread and let sit for 10 minutes.

  12. Bake for 20-25 minutes or until the custard has set.

  13. Enjoy warm with whipped coconut cream or ice cream.
