Paleo Italian Rolls

Yes I am Italian in a Paleo world! I love my Italian sandwiches with all fresh meats from D&D Market in Hartford!  My Nana and I would make these long sandwiches on the weekends and call them airplanes.  Never sure why she called it that but perhaps because she made enough to feed an airplane full of people!  That is a typical Italian – Always enough food..   I was thrilled to create this recipe and I hope you enjoy too!

These are the perfect Italian Rolls but you can form them any shape that works for you!



  • 1 1/2 cup raw cashews
  • 1/3 cup coconut flour
  • 1/4 cup almond meal/flour
  • 1 teaspoon sea salt
  • 1 teaspoon baking soda
  • 3 large eggs
  • 3/4 teaspoon apple cider vinegar
  • 1/4 cup almond milk (or other non-dairy milk)
  • 1/4 cup unsalted butter, melted and cooled


  1. Preheat oven to 325 degrees.

  2. Prepare a baking sheet with parchment paper.

  3. Place cashews in your food processor or mini-chopper and pulse until smooth.

  4. In your stand mixer using your add in coconut flour, almond meal/flour, sea salt and baking soda. Put on low until mixed together using your flat beater attachment.

  5. Separate eggs in 2 small bowls for the yolks and whites.

  6. While on low add in smooth cashews, egg yolks, cider vinegar, coconut milk and melted butter.

  7. Continue blending until a sticky dough forms in the mixer. Let rest.

  8. In a large mixing bowl whisk egg whites until you have reached stiff peaks.

  9. Add egg whites in to the mixer and put on low until the egg whites are incorporated in the dough mixture.

  10. Divide the mixture in 4 dough balls.

  11. Drizzle olive oil on your hands and roll them out to create and small loaf.

  12. Place on the prepared sheet and put in the oven for 25 minutes. Use immediately to create your Italian hero!
