Paleo Hot Cocoa

I can't wait to see Brooke next weekend. I know we will be using Chocolate ALOT! She already asked me if we can do a cooking video while making a chocolate cake and I thought we would make hot cocoa too. I am going to test Paleo Marshmallows when she arrives. So much fun.. I can't believe she is going to be 7. I crack up when she sends me emails now. Love that little girl so much. Well - this hot cocoa will be made next weekend while we celebrate Christmas. I may for a treat whip up some cream just for Brooke! This will make 2 mugs of cocoa. Enjoy a Paleo recipe and keep warm!

 

Ingredients

  • 3/4 cup unsweetened organic coconut milk
  • 1/2 cup full-fat organic coconut milk (from a can)
  • 2 ounces dark chocolate, melted (30 seconds in microwave)
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • Cinnamon stick for each cup
  • Coconut cream (in the carton) for a topping
  • Shaved dark chocolate or sprinkle of cocoa powder for garnish

Directions

  1. In a saucepan over medium heat add the two coconut milks and bring to a light boil. Then lower to simmer.

  2. Whisk in chocolate, cocoa powder and vanilla to combine well.

  3. Divide into 2 mugs, add in cinnamon sick top with a little coconut cream and garnish with shaved chocolate or cocoa powder. Enjoy with a precious one!
