Paleo Crunch Pancakes

My Paleo Granola Crunch is requested weekly in my house. I decided to make a triple batch and made a yummy Paleo Crunch Pumpkin Bread and added some to my pancakes. Everyone loved them. If you are looking for a great hearty breakfast try my Paleo Crunch Pancakes!



  • 1 cup blanched almond flour
  • 3 tablespoons coconut flour
  • 1/2 teaspoon sea salt
  • 2 large eggs
  • 3 tablespoons raw honey
  • 1 teaspoon vanilla
  • 3/4 cup coconut milk or almond milk
  • 1/2 cup Cindy's Paleo Granola Crunch
  • Coconut oil or butter coating pan when making pancakes
  • Pure maple syrup


  1. In medium mixing bowl add almond flour, coconut flour and sea salt. Mix well with a fork.

  2. In another medium mixing bowl whisk eggs, honey, vanilla and milk.

  3. Add wet to the dry and combine using a whisk or spatula. Then add in paleo granola crunch.

  4. Heat a large sauté pan or grill pan over medium-high heat. Add coconut oil and let melt and get hot then add about 1/4 cup of pancake batter for each pancake.

  5. Let the pancakes start to bubble around the edges (about 2-3 minutes) then flip and cook on the other side for another couple of minutes.

  6. Enjoy with pure maple syrup
