Paleo Chocolate and Almond Lava Cakes

I have a new love!  When I was doing my weekly shopping at Shop Rite I found Wild Friends Vanilla Expresso Almond Butter and decided to give it a try!  The espresso got me! 

I first put it in my mid-afternoon smoothie.  My granddaughter loves it in her hot cocoa and I decided to make this dessert for my husband's birthday.  I don't really have a sweet tooth (and never had) but my husband loves lava cakes.  We went to a friend's house and I brought these in my Quattro Stagioni Jars and what a hit!  Just adding that tablespoon of this amazing almond butter made this dessert a great birthday cake!

I served with coconut ice cream and as it melted down the lava cake there were lots of smiles!

Give this Paleo dessert a try!





  • 1/2 cup almond meal
  • 1/2 cup coconut oil, plus more
  • 1 cup chocolate chunks (enjoy life)
  • 3 large eggs, room temperature
  • 1/3 cup coconut sugar
  • 1 teaspoon vanilla
  • 1/8 teaspoon sea salt
  • 4 teaspoons almond butter


  1. Preheat the oven to 425 degrees Fahrenheit. Grease 4 ramekins or 5 ounce jars using coconut oil.

  2. In a glass bowl, melt the chocolate chips and coconut oil, either in a double-boiler or the microwave (15 seconds at a time in the microwave). Whisk until smooth.

  3. Stir in the sugar until combined, and then whisk in the eggs.

  4. Stir in the vanilla, pinch of sea salt and almond meal. Lightly stir until just combined.

  5. Divide the batter among the 4 ramekins.

  6. Top each serving with 1 teaspoon of almond butter. Press the back of the spoon slightly into the middle of the lava cake.

  7. Bake for 13-14 minutes, until just set.  Cool for 5 minutes then top with ice cream or whipped coconut cream then sit down in a comfy chair with a spoon and enjoy!
