Paleo Almond Butter and Jelly Bars

Before we left to head North for the summer it was time to clean out the kitchen.  We were planning a day on the boat and I decided to make these Paleo Almond Butter and Jelly Bars.  Paleo OMG these were amazing.  There were a few left over and my sister and I enjoyed them with our coffee.  So GOOD! 

Give them a try.  

Note:  I did put them in the refrigerator in bars after they cooled for 30 minutes as it made it easier to cut into square.


  • 2 cups almond flour/meal
  • 1/2 cup coconut sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/2 cup almond butter (or another other nut butter)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sugar free jelly (your favorite)
  • Melted coconut oil to coat baking dish


  1. Preheat oven to 350 degrees F.  Brush a 8x8 baking dish with melted coconut oil and you may also line with parchment paper.  (I didn't but sometimes I do).

  2. In a large mixing bowl add almond flour, coconut sugar, baking soda and salt.  Whisk well together.

  3. Add in almond butter, eggs and vanilla then combine until smooth.

  4. Put 1/2 of the batter in the prepared pan then spread the jelly over the top layer.  Add the remaining batter and spread out even.

  5. Bake for 30-33 minutes or until you can remove a toothpick clean in the center.  Remove from oven and let cool before slicing.

  6. Store wrapped in the refrigerator.
