Lemon-Garlic Shrimp Shisk-Kabobs


  • 3 cloves Garlic, minced
  • 2 shallots, minced
  • 2 tablespoons fresh thyme leaves, finely chopped
  • 2 tablespoons Italian parsley, finely chopped
  • 1 teaspoon chili pepper flakes
  • 1/4 cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 pound large shrimp, shelled and deveined
  • 1 small zucchini, sliced
  • 1 container cherry tomatoes
  • 1 yellow pepper, chopped
  • 1 red onion, chopped
  • Any other vegetable you want to add
  • Skewers for grilling


  1. I a large bowl whisk together all of the lemon garlic shrimp ingredients (except the shrimp) in a bowl. Toss the shrimp in the mixture until evenly coated. Cover and marinate in refrigerator for 2 hours.

  2. On a platter set out your vegetables.

  3. If you are using wooded skewers soak in cold water for 30 minutes. This will prevent them from burning during grilling.

  4. Take the skewers, shrimp and vegetables and create your skewers by alternating ingredients.

  5. Heat grill to medium. Grill kabobs directly over heat source for about 10 minutes, turning 1/4 rotation every 2 to 3 minutes, or until the shrimp is fully cooked.

  6. If you are entertaining then put these in a decorative tin, platter or bowl with your favorite dipping sauce.

    Note: You can create the same shisk-kabobs using meat or poultry. Just cook until meat if at the correct doneness.
