Italian Pulled Pork In the Slow Cooker

I make this Italian pulled pork recipe often during the summer at our lake house. I can let it cook all day, shred the pork then keep warm until ready to serve.

Pulled pork is a great Paleo Diet recipe using my Italian ingredients. I like adding the hot sauce to give it a little extra kick!

 

Ingredients

  • 4 pound pork butt
  • 3-4 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon of fresh ground black pepper
  • 1 15oz can low sodium chicken broth
  • 1/4 cup franks hot sauce
  • 1 jalapeño pepper, diced
  • 2-3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • teaspoon of dried thyme
  • 1 teaspoon of fennel seeds
  • 1 teaspoon of paprika
  • 1/4-1/2 teaspoon red pepper flakes
  • 1 large yellow onion, sliced

Directions

  1. Take the pork and rub with olive oil then season with salt and pepper.

  2. In a bowl combine all of the ingredients (until the onion) and whisk together.

  3. Add roast to the slow cooker and pour in mixture. Then add onions to the top! Rub mixture over the pork roast.

  4. Set your slow cooker to low and set in the roast. Pour mixture then top with onions.

  5. Cover and let cook for 6-7 hours.

  6. Take out of slow cooker and shred the meat. Place back into the slow cooker and keep warm until ready to serve.
