Herbs and Garlic Marinade

I love my herb gardens and sometimes they overgrow so we need to use them up.  I love to make pesto and it's easy to freeze in small containers.

I decided to make a marinade by using thyme, rosemary and basil with lots of garlic.  I made this yummy chicken and I am sure you can find so many ways to use this.  Go ahead and make it...  

 

Ingredients

  • 1 handful thyme
  • 1 handful rosemary
  • 1 handful basil
  • As much garlic as possible
  • Kosher salt
  • Freshly ground peppeer
  • Extra virin olive oil

Directions

  1. Cut your herbs and give a quick rinse.  Remove thyme and rosemary from stem.  Remove leaves from basil stem.

  2. Add all of the herbs into a blender.  Take your garlic and peel and rough chop then add into blender.  Add about 1 teaspoon of salt and 1/2 teaspoon of pepper (taste after to check if you need more). Pour in about 1/2 cup of EVOO.

  3. Blend until you have a nice consistency.  (You don't want it puree yet not chunky).   If still chunky and dry add in a little more EVOO.  (this depends on the handful of herbs.

  4. Taste for any additional salt/pepper.  Marinade perfect for steak, chicken or seafood!
