Since we received the Big Green Egg a few weeks ago creating new recipes has been so much fun. My husband and I really enjoyed this Herb Marinated Grilled Flank Steak. You can use this recipe for so many creative meals. I love to just serve with several sides and enjoy fajitas or top with Roasted Tomatillo Salsa.
In a medium bowl combine garlic, thyme, sage, oregano, rosemary, salt and pepper using a fork. Set aside!
Trim the steaks of excess fat and place on a working board. Place a piece of plastic wrap and take a mallet and just hit is about 5-6 times on each side. I tried this for the first time and it really made the steak extra tender but this step is optional.
Rub herb mixture all of both sides of steak.
Take a large sealable bag and place flank steak in the bag including all of the herbs. Drizzle in the olive oil and massage to coat all of the steak. Feel free to add more. Seal bag them place in a dish (just in case it leaks) and refrigerate for at least 2 hours but overnight would make this meat extra special!
Heat your Big Green Egg to 500 degrees. While the Egg is preheating take the meat out of the refrigerator and the bag. Place on a platter and let come up to room temperature; about 20 minutes.
Once preheated place the steak on the egg and let it grill for 3 minutes. DO NOT TOUCH IT! Flip over and grill for another 2 minutes. Shut the vent and let it cook for an additional 5 miutes. Remove from Egg and let rest for 5 minutes. Slice against the grain and enjoy with your favorite sides.
Note: This recipe is perfect for a Mexican fiesta!
