Herb Grilled Chicken

I have to start off this recipe by saying OMG.  I had a sisters weekend to celebrate Michelle's 50th and our friends Dennis and Lisa offered to take us out on their boat for the day.  I made some amazing Herb Marinade from my garden and let the chicken sit for about 5 hours in the refrigerator.  

Glenn grilled them then I thinly sliced and made a large sandwich.  I cut them up into individual portions and everyone just loved them!  Hubby even ate the remaining sandwiches for lunch the next day!

Now to keep the chicken paleo you can enjoy grilled or over a salad or grill up vegetables (zucchini, eggplant and red onion).  That is what my sisters and I did with the left over chicken then I drizzled EVOO and balsamic.  Super delicious.

Ingredients

  • 1-2 pounds boneless chicken
  • Kosher salt
  • Freshly ground pepper
  • 1 cup of herb marinade

Directions

  1. Season chicken with salt and pepper.  Add to a bowl with marinade.  Rub the marinade into the chicken. Cover bowl and refrigerate for 2-4 hours.

  2. Heat grill to 350 degrees F.  Once hot add chicken and grill for about 8-12 minutes over direct heat.  Let rest then dig in!
