Grilled Chicken with Orange Pesto


  • 3/4 cup fresh basil leaves
  • 2 tablespoons grated orange peel
  • 3 cloves garlic, chopped
  • 4 teaspoons olive oil (divided)
  • 3 tablespoons orange juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon sea salt
  • 1/2 – 3/4 teaspoon freshly ground pepper
  • 3 boneless chicken breasts, sliced in half
  • 2 oranges, sliced


  1. Using a blender or food processor, combine basil, orange peel, and garlic. Cover and pulse until finely chopped

  2. Add 2 tablespoons olive oil, orange juice, dijon mustard, and 1/4 teaspoon sea salt and 1/4 teaspoon pepper then pulse s a few seconds or until a paste is formed. You can add more olive oil if you want it a lighter pesto.

  3. Take chicken breasts, clean off any excess fat then season with remaining salt and pepper on both sides. Set aside

  4. Heat a large sauté pan and over medium heat add 2 tablespoons olive oil.

  5. Sauté chicken 3 minutes on each side or until cooked throughout.

  6. Slice orange and line platter. Add chicken breast then top with orange pesto!
