Grilled Calamari Salad

This is an Italian favorite! When ever this salad was offered at any restaurant in Tuscany we would order to enjoy before dinner with a glass of red wine! We have noticed that many Italian restaurants here in the states are now offering a grilled calamari salad, with their own personal twist.

*Cindy's Note* This is a recipe you want to prepare and enjoy immediately!



  • 1 pound fresh calamari (squid)
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 4 tablespoons olive oil (divided)
  • 1 lemon, zest
  • 1 lemon juice (1 tablespoon)
  • 1/2 cup thinly sliced red onions
  • 1 pepperoncini pepper, cut into thin rings
  • 2 tablespoons kalamata olives, pitted and halved
  • 2 tablespoons capers
  • 1/4 cup fresh parsley, chopped


  1. Preheat a grill pan to medium high.

  2. Take calamari and rinse then dry with a clean white kitchen towel. Season with salt and pepper.

  3. Add 2 tablespoons olive oil to the pan and once hot, add squid to the pan and grill for 2 minutes on each side.  Remove from pan and slice into thin rings.

  4. In a large bowl add squid with 2 tablespoons olive oil, lemon zest, lemon juice, red onions, pepper, olives, capers and fresh parsley.

  5. Toss together and enjoy!
