Gnocchi with a Creamy Pea Sauce

This recipe went great with my pan seared pork chops!

Ingredients

  • 1 pound package fresh gnocchi
  • 2 tablespoons unsalted butter
  • 1-2 cloves garlic, minced
  • 2 egg yolks
  • 1/4 cup light cream
  • 1/4 cup freshly grated parmesan cheese
  • 1/2 cup low sodium chicken broth
  • 1 tablespoon cornstarch
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup frozen petite peas
  • Fresh thyme

Directions

  1. Boil water in a large pot then add in salt to season.  Cook gnocchi until is barely started to float to the top (maybe 2-3 minutes).  We will finish cooking in the pot. Drain and set aside.

  2. Heat a pan over a medium temperature.  Add butter and garlic; cook for 30.  

  3. In a bowl whisk egg yolks then add in cream and cheese.  Pour into the pan and stir around until it begins to simmer.  In the same bowl add chicken broth and cornstarch; whisk very well.  Pour into the pan and continue whisking.  

  4. Add gnocchi into the pan with the peas and fresh thyme.  Let cook for a few minutes to heat the gnocchi and peas.  Top with extra parmesan cheese and fresh thyme before serving.
