Ginger Molasses

These are the perfect fall cookies!  I made 12 cookies and used a medium ice cream scoop then pressed the cookies down.  This way they were all the same size.



  • 1 cup nut butter (almond or sunflower)
  • 2 large eggs, room temperature
  • 1/4 cup molasses
  • 1/4 cup coconut sugar
  • 1/4 cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 2 teaspoons cinnamon
  • 1/4 teaspoon cardamon
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon allspice


  1. Preheat oven to 350 degrees F

  2. Line one or two baking sheets with parchment paper.

  3. In a medium mixing bowl add nut butter, eggs and molasses.  Using a hand mixer beat until smooth.  

    Slowly add in coconut sugar, coconut flour, baking soda, ginger, cardamon, cinnamon, sea salt and allspice while on a low speed until incorporated.

  4. Drop about a tablespoon of batter onto the prepared baking sheet and cook for about 8-9 minutes.

  5. Cool on a wire rack then enjoy!
