I am really enjoying creating bowl recipes! It's fun enjoying all of the flavors together. Not to mention we just love meatballs in our family. I hope you love this recipe!
Cindy's Note: You can use spaghetti squash, rice noodles or even zucchini noodles. I used linguini just because but also made it again and used spaghetti squash. Very yummy!!!
Spaghetti Squash - After I baked the squash and removed the strands then put in a bowl. I added fresh ginger, salt pepper and chopped cilantro then drizzled a little sesame oil! Amazing....

Prepare pasta/noodles according to package directions; drain and set aside. (If using spaghetti squash then bake and if using zucchini noodles just sauté with oil. salt, pepper, ginger, salt, pepper and fresh cilantro.
In a mixing bowl combine ground chicken, ginger, cilantro, salt and pepper.
In a large pan, heat 1 tablespoon of the coconut oil over medium heat. Add meatballs. Cook for about 10 minutes; turning occasionally.
Add in remaining tablespoon of coconut oil then whisk in vinegar, honey, lime zest and lime juice. Reduce heat to low.
To create your bowls add spinach to one side then add in pasta, meatballs and carrots. Taken the liquid from the pan and drizzle over everything in the bowl.
Top with more fresh cilantro leaves, micro greens, scallions then drizzle with oil. Enjoy :)
