GF Pecan Pumpkin Dessert


  • 1 (15-ounce) can organic pumpkin puree (not pie mix)
  • 2 tablespoons organic unsalted butter, melted plus more for baking dish
  • 1 cup heavy cream
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 3 tablespoons coconut flour or 1/4 cup GF flour
  • 1/2 teaspoon baking powder
  • 1/2 cups chopped pecans
  • Ice cream, optional


  1. Preheat oven to 350 degrees F. Coat a 9x9 baking dish with butter or melted coconut oil.

  2. In a large bowl combine the pumpkin, butter, cream, eggs, sugar, brown sugar, ginger, nutmeg, cinnamon and salt using a mixer.

  3. Add in flour and baking powder and combine well. Stir in pecans.

  4. Pour into prepared baking dish and bake for 45-50 minutes.

  5. Whisk until evenly combined and pour into the prepared baking dish.

  6. Let cool, slice and serve.
