We were in Germany for Oktoberfest and of course I had to buy a xxx. Since I had the dress we decided to have a Halloween party and the theme was German food. I made all of my favorites we enjoyed in Munich.
Place potatoes in a large pot then fill with enough water to cover them. Bring to a boil then set timer for 10 minutes. Test for doneness by pressing a fork into one of the potatoes. If it is easy to remove then set aside. If they are still hard then cook for an additional 5 minutes. Drain and let cool.
Heat a large sauté pan over medium heat then add in butter or oil. Cook bacon until crispy them remove and lay on a plate lined with a paper towel. Crumble and set aside.
Using the bacon fat add in onion and season with salt and pepper. Whisk in vinegar and sugar then bring to a boil. Add in a few tablespoons of water and stir into mixture. Set aside.
Thinly slice the potatoes into a large bowl then add in onion mixture and crumbled bacon. Use a large spoon to toss ingredients together. Serve warm!
