German Potato Salad

This is based of a traditional german potato salad I had in Germany during a beer festival. I decided to use white sweet potatoes to try to keep it as close to a Paleo recipe as possible. I made my own mayonnaise and you can go to the recipe below. Enjoy



  • 3 lb. white sweet potatoes, peeled and diced into cubes (keep the same size)
  • 4 slices thick bacon, cut into thin slices
  • 1/2 cup mayonnaise (recipe for Paleo Mayonnaise)
  • 1 small white onion, finely diced (1/2 cup)
  • 4 tablespoons unsalted organic butter
  • 1/2 cup apple cider vinegar
  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper


  1. To a boiling pot of salted water, add the cubed potato. Boil for 18 minutes. Using a slotted spoon remove them from the pan and add to a large bowl.

  2. In a saute pan over medium heat add bacon and cook until crisp (about 7 minutes). Remove from pan and place on a plate covered with a paper towel. Remove bacon fat into a cup.

  3. In a medium bowl combine paleo mayonnaise, onion, butter, vinegar, parsley, garlic, salt, pepper and 1 tablespoon of bacon fat. Whisk together.

  4. Pour over potatoes and coat carefully using a wooden spoon or rubber spatula. Cover and refrigerate until ready to serve or enjoy warm!
