Every couple of weeks I like to make something a little different. Since most of my recipes are Italian style I like to change it up a bit. I knew I wanted chicken tonight so I came up with this delicious Paleo General Tso Chicken recipe. I accompanied this dish with my Cauliflower Fried Rice.
In a wok or large sauté pan heat with 1 tablespoon oil over medium heat. Add broccoli and sauté for 5 minutes. Take out of pan and set aside on a plate.
Cut the chicken into 1-inch cubes.
In a medium bowl add egg and whisk then add coconut amino, pepper and arrowroot powder. Combine well then add the chicken in to coat.
Using the same wok or sauté pan add about 1/2 cup oil and heat to about 350 degrees. Drop the coated chicken into the hot oil (a few pieces at a time) and fry until crispy on all sides. About 4 minutes. Remove chicken and put on the a paper towel lined plate.
In a small bowl combine all of the sauce ingredients.
Drain and clean out the wok or sauté pan. Heat 1 tablespoon oil over medium heat. Add the sliced green onions then chicken and broccoli back into the pan.
Pour the sauce into the pan and stir to coat all of the chicken and broccoli. Let sauté for about 5 minutes.
Enjoy with my Cauliflower Fried Rice.
