Garlic Zucchini Spaghetti with Grape Tomatoes and herbs

  • 1 tablespoon olive oil plus more
  • 4 garlic cloves, chopped
  • 2 cups grape tomatoes cut in half
  • 1/4 teaspoon red crushed pepper flakes
  • Kosher salt
  • Freshly ground pepper
  • 2 tablespoons freshly chopped fresh basil
  • 1 large zucchini, spiraled
  • 1 tablespoon unsalted butter
  • Fresh parsley


  1. In a large non-stick pan set over medium heat, Add in the oil. Add the garlic and cook until golden, 30 seconds. Add the tomatoes, and crushed red pepper flakes, they season with salt and pepper. Reduce the heat to low. Simmer, covered, until the tomatoes soften, 15 minutes. 

  2. Toss in zucchini and increase temperature to medium-high for 2-3 minutes.  Add in butter and toss zucchini mixture around using tongs. 

  3. Divide into 4 bowls then drizzle each with a little olive oil then garnish with fresh parsley.
