Focaccia with Parmesan, Rosemary and topped with Tomato

I love using the Gluten Free mixes from my friends at Moon Rabbit Foods. I made this Focaccia with Parmesan, Rosemary and topped with Tomato for my friends at Connecticut Lighting and Scot Haney when we filmed a segment for Better Connecticut! Loved by all..

Ingredients

  • Follow instruction on the package of Moon Rabbit Focaccia and Pizza Dough Mix
  • 1 1/2 tablespoons fresh rosemary
  • 1/2 cup freshly grated parmesan cheese plus extra for topping
  • 1 tomato
  • 1-2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 teaspoon sea salt
  • Fresh parsley and/or rosemary
  • Special Equipment
  • Cast Iron Pan

Directions

  1. Preheat oven to 375 degrees F.

  2. Follow direction on package of Moon Rabbit Focaccia and Pizza Dough Mix for the Focaccia bread. Or use your favorite basic focaccia bread recipe.

  3. Combine ingredients using your Kitchen Aid .

  4. With the mixer running on lowest speed add in fresh rosemary and parmesan cheese and when the mixture turns into a ball stop mixer and let rest.

  5. Take your cast iron pan and add butter then place in the oven. We want to heat up the pan and melt the butter. Just for 3 minutes. Using an towel carefully remove pan from oven. Use a pastry brush and coat pan with butter.

  6. Remove the mixture and place in the center of the hot pan and carefully by using your hands spread out mixture evenly in the pan.

  7. Slice tomato and top mixture and drizzle with olive oil and salt.

  8. Bake for 20 minutes, remove from oven and top with additional parmesan cheese and fresh parsley or rosemary and bake for an additional 5 minutes. Remove from oven and let rest for 5 minutes and remove from pan to enjoy!

    Note: You can be extremely creative when making focaccia bread. I love to include saute zucchini and parmesan cheese with a variety of fresh herbs. You can top with caramelized onions and tomatoes. Be creative and have fun...
