Flax" vegan" Eggs

As I am preparing for Daniel Fast it was necessary to come up with another way to use "eggs" in my recipes.  Especially for binding.  I was told by a Vegan baker that she uses Flax seeds.  I tested it out and yes......  Works perfect.

Here are a few tips from my stumbles.  I will be adding this recipe link to keep it handy on multiple recipes for the Daniel fast and any Vegetarian recipes.

Tips:  Get a coffee grinder (about $9.99 or go to a thrift shop for $2)  You will use this every time you make your Flax eggs.  

Buy raw whole flax seeds and grind them fresh each time. Keep flax seeds in the refrigerator or freezer for storage.  

You may find there is a "nutty" taste but I think it's very subtle and have begun to enjoy the taste.

This recipe is per 1 egg.  If you need to use 2 eggs just double, 3 eggs just triple, you get it now......

 

Ingredients

  • 1 tablespoons flax seeds, ground
  • 3 tablespoons water

Directions

  1. Add ground flax to a bowl then add in water.  Whisk until combined well.

  2. Refrigerate for about 15 minutes.  This will allow the "egg" to combine and it become almost a gelatin mixture.

  3. Use in your recipe.  Enjoy xo
