Dry Rub Ribs

  • 2-3 tablespoons honey
  • 2 tablespoons freshly ground pepper
  • 2 tablespoons paprika
  • 2 tablespoons onion powder
  • 1 tablespoon chili powder
  • 1 tablespoon sea salt
  • 1/2 teaspoon freshly ground nutmeg
  • 1/2 teaspoon ground sage
  • 1/4 teaspoon cayenne pepper
  • Rack Ribs

  1. Preheat oven to 225 degrees F. Take the honey and bush all over ribs

  2. Mix together all dry ingredients in a small bowl, rub over meat before at least 30 minutes prior to baking

  3. Ribs are best if you cook them "low and slow". Here is what to do!

  4. Place your rib rack on a large baking sheet and stand the ribs on edge, or lay the slabs on cooling racks inserted into the pan.

  5. Bake the ribs for 3 to 4 hours covered for the first 2 hours them uncovered for the last hour. If you like you can baste them with water or beer every 30 minutes.

  6. You can set them out on the counter until you are ready to serve. Prior to serving, heat your grill or smoker outside. When hot add slap of ribs to grill and keep covered for 15 minutes. You just want the outside to become a little crusty and warm throughout.
