Cuban Sweet Potato and Beef Picadilo

Perfect make ahead meal if you are meal planning.  This can be made then stored in a sealed container in the refrigerator.  To warm just put in the oven for about 20 minutes at 350 degrees F.  Enjoy xo



  • Coconut oil for cooking
  • 1 pound ground beef or turkey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can chickpeas, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/4 - 1/2 teaspoon chili powder or cayenne
  • 1/4 teaspoon cinnamon
  • 1 large or 2 small sweet potatoes (orange or white), peeled and chopped
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (8 oz) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon coconut vinegar
  • 1/2 cup green olives, cut in 1/2


  1. Preheat oven to 350 degrees F.  Prepare a 9x13 baking pan to bake this dish.

  2. Heat a large sauté pan over medium heat. Add in about 1 tablespoon of oil. Cook meat until brown. Breaking apart with a wooden spoon while cooking. Drain fat put meat in a bowl. Set aside.

  3. Toss drained and rinsed chickpeas in a bowl.  Add in cumin, oregano, chili powder and cinnamon then toss around to coat the chick peas. Place on baking pan lined with parchment and Roast for 12 minutes. Remove and set aside.

  4. In the same sauté pan over medium heat.  Add in a little oil then add the sweet potato and let cook for about 7 minutes.  Then add in onion, peppers, and garlic.  Cook for about 3 minutes.  Just until the onion and pepper begin to soften.  Toss in the bowl with the meat.

  5. Using the same sauté pan over medium heat and pour in the diced tomatoes.  Add in paste and vinegar.  Take the back of your spoon and press the paste to incorporate into the sauce.  Just let it simmer then pour into the bowl with the meat.  Toss in the chickpeas and olives.

  6. Bake for 25 minutes.. Enjoy with your favorite side.
