Creamy Cauliflower Rice Pudding

We grew up enjoying warm rice pudding for dessert.  My Nana loved keeping it warm on the stove for us and for he too!  It was one of her favorites and my our family still gets excited over warm rice pudding.

I decided to try a Paleo version and was very surprised by the similar texture and flavor.  I use cauliflower in many of my recipes such as risotto, paella, arancini and even pizza crust.

I hope you enjoy this creamy dessert!




  • 2 cups "riced" cauliflower
  • 1 cup almond milk
  • 1 egg, room temperature
  • 2 tablespoons coconut sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon (a little more when serving)


  1. Add cauliflower and almond milk in a saucepan over medium heat.

  2. Whisk the egg in a small bowl then mx it into the pan. Stir in coconut sugar.  Let cook for about 10 minutes.  Add in cinnamon and vanilla.  

  3. Let cook until thick and creamy; about 7 minutes.  Keep warm until ready to enjoy.
